I have been gluten free since 1996 when I was diagnosed with Celiac Disease. Since that time I have learned the art of living well gluten free. I went dairy free in November, 2010. Living gluten free and dairy free is not always easy, but is doable. When I first went gluten free, there were not many resources or gluten free items available in grocery stores. We have come a long way! In order to pay it forward, I served as president of the Oklahoma Celiac Support Group for nearly ten (10) years and served on the board of the Celiac Sprue Association, Inc., a national support organization. I have also authored several articles on Celiac Disease to help others living gluten free.
I believe that attitude is everything. A gluten free diet can be a blessing or a curse–you choose. For me, it’s a blessing. My husband and I are practicing attorneys in Oklahoma City and the proud owners of two Boxers, Daisy and Rosco.
